Production

 

Monva’s traditional, extra virgin olive oils - Dominus, Valle Mágina, and Montabes - are made in the heart of Spain’s olive country, to the highest taste and quality standards. In order to ensure this, the oils are estate-produced from estate-grown olives cultivated in the rich soil of the Virgen de los Milagros property.

 

The olives

Only one variety of olive is used for the production of Monva’s oils: picual. Only olives grown on the Virgen de los Milagros estate are used; olives from other growers’ properties are not admitted.

 

The picual olive trees thrive in the beautiful, verdant Sierra Mágina Natural Park environment. On Monva’s 850-hectare property, 85,000 trees grow at the foot of the mountains. Here, at 700 metres’ elevation, they flourish in ideal climatic conditions and a clayey soil that contributes to the very healthy fruit they produce.

 

The harvest

The olives are harvested carefully. They are collected only when perfectly ripe, are shaken off the trees, caught in tarps, and never sit directly the ground where they might get damaged. They are quickly and gently transported to the processing plant for pressing.

 

Oil extraction

At the estate’s processing plant, the oil is cold-press extracted from the fruit no later than eight hours after it is harvested. Afterwards, it is decanted, and analyzed for its chemical properties.

Storage

In order to maintain the beneficial properties of the oils after their production, they are stored in stainless steel containers in temperature- and humidity-controlled conditions. They are kept in these big storage containers until the last moment before packaging, to preserve their freshness.

 

Packaging

The packaging process is a “just-in-time” operation that proceeds upon placement of an order by the client. Each of Monva’s extra virgin oils is packaged in different styles of containers, available in various volumes, and transported in set quantities.
