Commitment to quality infuses every activity at the Virgen de los Milagros property. In order to display the “D.O. (Denomination of Origin) Sierra Magina” distinction on their labels, Monva oils have to undergo very careful preparation.

 

Here’s a look at the many ways that Monva employees ensure our extra virgin oils are worthy of the best kitchens:

 

In the olive groves

Monva cultivates olives

  • with a drip-irrigation system
  • protecting the environment
  • following advice of biologists and engineers to achieve the healthiest possible olives

 

At harvest time

Careful treatment of the olives as they are collected is the most critical aspect in the making of quality oils. Monva harvests

  • only at peak fruit maturation
  • employing the “flying olive” harvest technique, whereby olives are collected mid-air and never sit directly on the soil
  • gently transporting and properly cleaning the harvested fruit

 

In the processing plant

Oil is extracted from the olives

  • within 8 hours of their harvest
  • using the mechanical, cold-press procedure
  • without any chemical treatment
  • conducting (both in-house and by external experts) rigorous and continuous analysis of the olives and the olive oils

 

In the cellar and packaging plant

At Monva, we keep the oil

  • in stainless steel containers
  • under controlled temperature and humidity
  • inert, to avoid oxidation
  • out of the packaging containers until just before transport to the customer
