Wild olive trees
(Acebuches)
Dominus Acebuche is made from the Acebuchinas, harvested by hand from the wild olive trees or
acebuches that grow at 600 metres above sea level, on the slopes of the Cortijo Virgen de los
Milagros, on the foothills of the Sierra Mágina Natural Park. Surrounded by protected woodlands,
which include aromatic plants such as thyme, sage, savory or rosemary, our wild olive trees grow
and develop naturally, acclimatising perfectly to the mountainous environment.
The harvesting of
the fruit is done necessarily by hand, and is carried out by means of a delicate method known as
milking. The immediate cold extraction of the harvested fruit yields an extra virgin
acebuchina olive oil of extraordinary quality and a very high content of natural antioxidants.
Picual olive variety
Discover our range of Picual Extra Virgin Olive Oils. A collection of five very different
brands, each with a different point of ripeness of the fruit, which provides unique
characteristics:
• Dominus Cosecha Temprana: produced mid-October from olives specially selected
at an early ripening stage. It has a fresh and powerful taste profile and a complexity of aromas
that make it truly unique. It will notably enhance the flavour of all your dishes.
• Huerta Los
Caños: from organic crops; its olives are also harvested in October at an early stage of
ripeness, which highlights its intense aroma and fresh and balanced flavour, which makes for
infinite pairings.
• Dominus Reserva Familiar: the fruit is harvested at the beginning of
November, when the olives are at what we call “pre-in veraison”, yielding an intensely fruity
oil, full-bodied, perfect for dressings and any other culinary use that requires a high quality
oil.
• Valle Mágina: obtained when the olives are at a medium stage of ripeness, in November;
characterised by its intense flavour and great chemical stability, due to its high content in
provitamins and natural antioxidants that provide excellent culinary properties.
• Montabes: we
harvest the fruits that have completed their ripening cycle in December and extract from them an
impeccable, intense and balanced Extra Virgin Olive Oil, perfect for dressings and for all types
of use in cooking.
Denomination of Origin
MONVA is a member of the Denomination of Origin Sierra Mágina. The olive grove extends across 61,000
hectares in the Sierra Mágina region, which is the European Union’s largest registered denomination
of origin in terms of extension. It is the largest source of activity and production and most of the
area is occupied by traditional olive groves growing on slopes, with an average gradient between 10%
and 15%.
The entire production and packaging process is carried out at the “Cortijo Virgen de los
Milagros” family estate, thus guaranteeing quality control to obtain a truly exceptional olive oil.
QUALITY
Sustainability and health
MONVA’s mission and values are closely linked to quality, sustainability and health.
Ensuring the highest quality and food safety in all the processes we carry out is of the utmost
importance to us, from the planting of the olive tree until every bottle leaves our oil mill. To
this end, we participate in studies and initiatives aimed at certifying the quality of our Extra
Virgin Olive Oil at all stages of the production process. The production of an excellent Extra
Virgin Olive Oil requires two key factors: quality fruit (hence the importance of having your own
olive grove) and a delicate extraction process.
Our team carries out extensive preliminary work to
achieve the best quality olives, from analysing the soil in our olive groves, the supply of water
and the necessary nutrients, through to the moment of harvesting.
MONVA’s mission and values are closely linked to quality, sustainability and health.
Other inherent natural factors also play a role in quality, such as the level of acclimatisation of the olive tree to its environment, the composition of the soil and other environmental conditions.
The unbeatable location of our olive grove, 600 metres above sea level, in the heart of the olive-growing province of the world, provides the perfect climate conditions for olive growth.
Our goal to continuously improve MONVA’s quality management system helps us live up to our
ancestors, who were pioneers in the cultivation of the largest (and surely the most productive and
beneficial) forest ever planted by man: the olive grove of Jaén.
The production and packaging
processes of our Extra Virgin Olive Oil are certified by the ISO 9001 Quality Management and ISO
14001 Environmental Protection standards, and are carried out under the control and supervision of
the technical team of the Denomination of Origin Sierra Mágina.

- Cultivation and processing in accordance with the Integrated Production Regulation, for sustainable cultivation.
